Hi. I’m Karen of @healthyGFfamily. We are a gluten-free family in support of my youngest son who was diagnosed with celiac disease 6 years ago and who adheres to a strict gluten-free diet. When Juiceman asked me if I wanted to try their products and share a day of eats, I jumped at the opportunity because a juicer and blender are perfect tools to help us make healthy, yummy gluten-free meals. **

So here it goes…

BREAKFAST

We started the day with Green Juices and couldn’t have been happier. As my friends and family know, I love my daily green juice but I am fortunate enough to have several juice bars nearby, so I’ve always just picked one up on my daily travels. Using the Juiceman, this was the first time I made my own. Wow! It was awesome! The Juiceman Power Plus couldn’t have been easier to use or clean. I loved being able to put in whatever ingredients I wanted and adjust the flavors.

For my green juice, I added kale, swiss chard (my fave!), romaine, cucumber, celery, apple, lemon and ginger. I juice everyday, so these are always delicious to me.

The best part of having the Juiceman Power Plus was that I could also make a green juice for my boys that tasted like lemonade. For them, I made a juice with kale, swiss chard, 2 types of apples and lemon. They loved it and my husband loved it too!

On To LUNCH...

On to lunch… it was time to try out the Juiceman Express Whole Juicer. I made an easy, yummy hummus and added it to a simple salad of mesclun greens, cucumbers, carrots, tomatoes, avocado and hemp seeds, all in a balsamic vinaigrette. If you haven’t tried hummus with balsamic vinaigrette, you’re missing out! I loved the ease and simplicity of the Juiceman Express Whole Juicer.

Next up… AFTER-SCHOOL SNACK!

My boys come home from school ravenous, so after school snacks need to be hearty. The Rainbow Acai Bowl made with the Juiceman Express Whole Juicer was perfect and packed with goodness.

I followed the Juiceman recipe except that I used Greek Yogurt instead of almond milk because my son prefers it. So the bowl is blended acai, bananas, blueberries, strawberries and plain Greek yogurt topped with raspberries, granola, banana, kiwi and blueberries. My son loved it! I loved that it was super easy to make and my son can make it on his own.

Finally, DINNER...

We had gluten-free penne with a tofu vodka sauce. I used the Juiceman Express Whole Juicer to make the sauce. If you follow my Instagram page @healthyGFfamily, you’ll see we eat lots of pasta dishes. They’re easy, adaptable and crowd pleasing. This dish is a family favorite. The tofu and vodka are mixed together in the blender, then added to the sauce. No one seems to notice it’s made with tofu instead of cream. So yummy!

Thanks, Juiceman for sponsoring me in this yummy day of eats — it’s been lot of fun!
