Raspberry Orange Baked French Toast

Directions

  1. Place oven rack in the middle of the oven and pre-heat to 350 degrees Farenheit. Spray and 9 by 13 inch baking dish and set aside.
  2. In blender, combine orange juice and raspberries until smooth.
  3. In a large bowl, beat the eggs until frothy. Add the orange-raspberry mixture, salt, and bread cubes. Stir to combine. Pour mixture in prepared baking dish.
  4. In a small bowl combine cinnamon and sugar. Sprinkle mixture over the top of egg mixture in an even layer.
  5. Bake 40 to 45 minutes until the top is golden and the filling is set.
  6. Serve garnished with a dollop of vanilla Greek yogurt, fresh raspberries, orange segments & mint sprig.
