In a medium sized pan, over medium heat, melt butter in the pan and toss in the chopped onion. Cook until the onion is translucent and tender.
Meanwhile using your Juiceman® Compact Juicer, juice your carrots, apple, and ginger reserving all the pulp for adding later into the soup.
After onions are cooked add chicken broth, salt, pepper, honey, sweet potatoes and curry and mix well and allow to boil. After broth is brought to a boil then add your carrot, apple and ginger juice with the reserved pulp and mix well to combine and bring to a boil.
Allow to simmer until potatoes are tender or about 15-20 minutes. Serve with an extra dash of curry on top and enjoy!
